Too Tiny for a Serving?

Do you ever have leftover veggies but not enough to have with another meal? I do!

I put them in a freezer safe container, label it with the date I started collecting the vegetables. Any time I have a small amount leftover I throw them in! 

When I get a "usable" amount, I can use them in a quick lunch. Throw them in some rice, couscous or even some  broth for veggie soup.

I'll usually end up with peas, corn, carrots and several kinds of beans. Whatever you have left will work perfectly.
